Are we all aware we should give up eating pork?

And not because many of us consider pork to be serious tref (however that’s spelled).

No, it’s not because some of us eschew pork for ancient dietary reasons. It’s because we must eschew pork for immediate safety reasons, due to new inspection codes. The debilitated codes are called — if you’re like me, you’ll love this — The New Swine Inspection System. Which means, The No More Swine Inspections. System.

Ah, the Trump administration. Every head of every vital US agency is nuts. Their overall mandate is to take apart each agency, release it from all those irritating regulations and rules which have protected us since we’ve demanded we need regulations and rules to protect us.

I love pork. But I will not be buying, cooking and eating it until after 2020, when a new rational federal administration restores all the rules for inspecting pork in the pork plants so that the pork parts do not emerge containing a variety of bad things, like E.Coli and salmonella and, for all I know, trichinosis. (Feel free to correct me if that’s not why and how trichinosis shows up in pork. Do feel free.)

Anyhow, here’s the story. I think we can blame Sonny Perdue, USDA Secretary. Who is not one of the Orange-Skinned Chicken Raising Perdues, although I find this hard to believe.

Post script: The Trump administration is planning a similar inspection roll-back for beef. Vegetables are looking better and better every day.
